I guess they figured it would be something to do after you finish?
First time, I just bought some businesses as I played. You can afford Trevor getting an airport and a submarine and getting Franklin a Taxi business. I kind of wondered about the really expensive businesses though. They were way out of reach when I finished last time. So I recently played again and saved all my money and didn't buy anything and didn't do any of Lester's missions so I could have a lot of cash to invest after that Big Score.
I haven't gotten around to SPOILER picking whom I should kill, though, and following through. You don't get the payout until after that. I can finish the game owning a golf course or a few movie theaters, but yeah, what's the point? Hell if I know. There's no way you could afford these things without saving Lester's assassinations until the end, but I haven't bothered so I'm not sure. I think the way I did it the first time was better, I'd get missions coming up for my Taxi business as I played, and cash for anything that blows up from the salvage business.
