Well what are you putting in it besides rice?
The Magic Fried Rice Ingredient is actually eggs, and the most common mistake I've seen is the leave them out or treat them wrong. Ignore Choson (in general, but specifically here), peanut oil is fine if that's what you like.
Use clean, slightly dry, pre-cooked rice. Make a "batter" of eggs and chinese soy sauce and just a little five spice powder. Have cut up green onions and other little morsels ready to go. Best to use pre-cooked things, things that don't need to be cooked, or things that will be cooked after only a little heat
I can't help you on proportions here, you have to figure out what you like, but I do use about 1 egg for every two cups of rice. Make small batches at first. To get the egg/soy/spice batter right, mix up some trial batches, add chopped green onion, and cook it as very thin "pancakes" on the surface of a hot, well-oiled, flat pan. You want something that's a little too salty to eat alone, but still full of savory and delicious flavor.
Heat up plenty of oil, don't assume you can do this in some kind of lean cuisine fashion. Get it really good and hot, you will be doing everything very quickly from here in. Mix the eggs and about half of the rice together; put the other half of the rice in the pan and start cooking it. Now throw in the eggy rice and STIR EVERYTHING A LOT. KEEP STIRRING. The idea is to coat the rice with the eggs and the hot oil before the eggs can cook into a curdy mess. Throw in the snacky morsels once the eggs are starting to dry on the rice. STIR STIR STIR. Taste, add salt and other seasonings as needed, stir a little more. Okay you are done, eat it. |
