The basic setup is two people attacking, one person defending. If there are two people in front of you, you are the defenseman. Hang back around half court if you're the defenseman and the ball is deep. The main thing you are trying to do is keep the ball in their zone if they try to clear it, and to prevent long lobbed goals from flying across the court into your net.
The most fundamental thing about this game is that hitting the ball very often leaves you in a position where you cannot immediately play it. That means you have to cover your teammate's dead time while they reposition, and they have to cover yours. There is another aspect to this in boost management, because you will not be doing much useful without boost. It is best to leave and get boost if you are out most of the time. At this point the defenseman might rotate in while you move back to collect boost, so you are now the defenseman.
Don't be a ball chaser. Everybody starts out as one, because they have no idea what they are doing. Having all three teammates attempting to hit the ball at the same time without rhyme or reason is terrible. Learn to yield the shot if another guy on your team has better positioning.
For low level play, the most effective thing you can do is just stand back from the scrum of ball chasers and hit the ball into the net when it pops out.
Car choice is incredibly important, though you may not realize at first. There are four cars that are straight up better than the rest. In the non-DLC cars, you have Octane and Breakout. As for DLC, you have Dominus and the Batmobile. Octane is the best all-arounder. It is nimble on the ground, and it has a very good hitbox. It is the probably the best beginner car, and it also incredibly popular with pros. You should switch immediately once you have it unlocked. Breakout (my favorite) is the most nimble car on the ground, and is quite nimble in the air, but it has a very flat hitbox that can make getting nice hits difficult. Dominus and Batmobile are pretty similar. Both are decent on the ground (with the Batmobile having the edge) and ridiculously nimble in the air. Both are pretty flat like Breakout. The other cars are hobbled by shitty turning or flying dynamics. None of the cars are faster or accelerate any differently.
TRAINING MODE IS ACTUALLY WORTH IT. I cannot stress this enough, especially for learning how to fly.
You have something like a quick two count after you leave the ground to do your air dodge (the flipping). Even without any aerial skills you can make use of this. I was always hitting the air dodge immediately after jumping when I first started playing.
Righting yourself mid-air so you hit the ground with your wheels is important. By default holding the handbrake button while aloft will shift your axis of rotation on the analog stick to make this easier. It is better to rebind the roll function to the left shoulder button so that you can continue to boost while rolling in the air. That's more of an advanced tip, but breaking the muscle memory later on is really irritating.
Flipping camera view is important. You want to be on the ball-locked view by default, but when moving out of the zone back to defend or pickup boost you might want to flip back to locked-forward view. I also use quick flips of the camera mode just to get a glance at what's in front of me for greater situational awareness. Hitting teammates is frowned upon.
