I'd say go with the first one mostly because it's where everything starts, and also it holds up handsomely even today; but apparently the best Dark Souls is the first Dark Souls you play, and the first one was the first one *I* played, so there's that.
The first one allows for more variety in builds, and I think it's more gentle with newcomers; lots of people like putting on heavy armour and cowering behind a huge shield, and the first one makes that viable. I'd also argue that it's the one that has the more attention to tiny 90s-console-gaming-style details that make it feel more like a Labour of Love(TM). Like, if you bother to cut a monster's tail off before killing it, you get a unique weapon. And the famous interconnectivity of the world that everyone talks about is at its best here.
The third one makes it pretty apparent that Miyazaki already wanted to put the series to sleep and make something like Sekiro, and everything is way faster and you're stunlocked way easier and you have way less time to react. You'll get that gigantic shield shoved up your ass faster than you can say "praise the sun". Also, if you care about the story, the third one has an embarrassing amount of retconned nonsense. And if you played Bloodborne (or even saw a few videos), you'll notice that half the assets are recycled shamelessly. It's still a great game and it has some of the best boss fights in the series, but the guy clearly wanted to make something else.
