First, you have two irregular shapes and not much depth to work with. Trial-and-error possibilities are limited because the leg could split if overshimmed. Devising a shim will often take longer than sharpening a nail.
Second, the joint fails when forces separating the legs exceed the strength of the joint. Due to limited surface area and skinny pieces, you can only increase its holding power so far. The nail allows the crosspiece to slide along it and then re-seat (hah) itself when the force on the legs goes away.
