The hell?

Cage all animals you can. One cage is enough, use multiple cages for sorting. I keep a cage for dogs so I find them when I need more wardogs or hunting dogs. Any animals you want out of cages, chain up by building restraints and assigning them to it. Handy for keeping goblins and monkeys out of your stuff. Have a couple dwarves hunting, keeps down the wildlife. Don't pick a map with running water or a coastline (the water simulation is pretty slow).
Just pick a 3x3 or 4x4 size map. There's no point in generating a humongous map if you only use 5% of it, especially since there are 100+ vertical layers now. I'm not using a supercomputer and the FPS never dip noticeably. Other tips: There's an announcement screen (a). Use this screen to zoom (z) to announcements, such as your "so-and-so has been interrupted by a cave crocodile" announcements. OK enough tips for now I just abandoned a fort, my second since the latest big overhaul. Not for any particularly hilarious reason - simply because I was at peace with goblins (?!?!?) and the whole fucking point was to try out the new military system. My first fort failed because to my great surprise, telling a bunch of dwarves with no experience in wrestling will no longer turn them into superdwarven invincible naked wrestlers after a couple seasons of sparring anymore. Since no one knew how to wrestle but dodging is pretty intuitive, they decided it was more important to sit around and trade dodging tips. Eventually, a bunch of goblins showed up and owned the shit out of them.
