Ctrl+z will only take you back one step. You must use Ctrl+Alt+z to go back more than once. You know what the shortcut should be for only going one step back? HITTING CTRL+Z ONLY ONCE! Hit it too many times? Easy, just hit the default redo shortcut Shift+Ctrl+Z godammit you FUCKS! I guess we should be grateful that toggling layers isn't set to Alt+Shift+Capslock+F7. This is what happens when your biggest competition is open source shitpiles like Gimp.
I don't know anything about Gimp, sorry. To answer your Photoshop question, [control] z toggles the two states Photoshop keeps in memory. The other key-combos will cycle you forward and backward in the history pane. [control] z is often used by amateurs and longhaired muscle bound knuckle-heads whose fingers are too fat for their keyboards. Hope this helps! Message now! with $19.95 in bitcoin to Roop! includes links to many useful tutorials including Fun with Photoshop Actions! and Customize Keyboard Shortcuts in Photoshop
