I think there's a simple fix to make melee a viable option: give the enemy their free counterattack after the melee strike.
It makes for a toss up choice between ending things early with a heavy-damage finishing blow, or just falling short and getting shot in the back for your trouble.
I like the combat, I like the mech designs, I love the music for this game, but holy shit does the character art suck! When your title screen and super-easy difficulty option indicate this game is all about the porn, at least draw the girls to look sexy! Even by anime standards this is amateurish, just who is this weak link in the development team? Let's check the Kickstarter page...
