Blackviper's Windows 2000 and Windows XP services guides are a sort of defacto standard (link credits go to Crispin of OMM from way, way back). Until and unless you have a clue and/or are willing to experiment a bit/put up with things sometimes not working, just go with the "Safe" configuration - should work for everyone and turns off the most dangerous/completely useless crap. Make sure you read the descriptions of each service (the links of each service name) before you turn it off, I don't want to be responsible for your favorite faggot service no longer working (someone out there might use Remote Assistance or something).
I've managed to trim the amount of RAM Windows XP takes down to 41 MBs using a heavily modified version of the 'Gaming' configuration - about the only otherwise useless thing I leave running is 'Cryptographic Services' because without them Windows Update won't work. Never had a problem, either.
