The demo's content, or about 90% of it, isn't in the game.
When Leonardo Da Vinci (not a spoiler, really, you learn who he is within the first five minutes of the real game) teleports out in the demo after handing you your stuff? He teleports both of you to Barcelona RIGHT THEN AND THERE.
What's this mean? No slogging through millions of creatures and getting to level 5 before you see Barcelona which means character types other than pure warriors have a chance to beef up. Plus the monsters in and around Barcelona are much easier to kill than those in the demo - the curve is much gentler.
So far into the game it rules.
