Isn't that the opposite of accepted wisdom? The talking heads say you're supposed to sear first to seal in the juices, then do the slow roasting. Do you do any pot roasts? I'm looking for a cut that I can use that the store actually carries. The taste of a mushroom that's been sitting at the bottom of the pot is even better than the meat itself.

Wisdom of the talking heads well I'm sure their technique works for them, just as mine works for me. Dunno what to tell you except that Nigella Lawson thinks that you can cook a five pound lamb roast in an hour at 450 or something abominable like that - why I never.

Pot roast: you want fattier, gristlier, or on-the-bone cuts. Chuck roasts are a good entry point, but if you are already using chuck roasts, we will have to talk. Also you will reap benefits from treating the meat directly: slip slivers of garlic into holes poked in the meat, do a dry rub and sear it before whatever else you do to a pot roast, make the first step after searing a braise in very flavorful liquid (wine, strong herb or beef stock, etc.) and reject the kinds of pot roast wisdom that talk about 5 or 6 hour cooking periods for three pound roasts. An hour a pound is a good rule of thumb.
